Recipe: Fat Snax Crumbled Pie Crust

 

We love trying new recipes with Fat Snax cookies, but this 2-ingredient, no-bake pie crust recipe is one that we always come home to. This crust can be used as a versatile base for a variety of quick, delicious desserts. Best of all, it only takes 5 minutes tops! We also love how it’s super moist and holds together well, adding a nice, crunchy base to your low-carb cheesecake or ice cream cake.

So, without further ado, here’s how to dish up the pie crust of your dreams:

Ingredients:

  • 3 packs (6 cookies) of Fat Snax cookies, flavor-of-choice*
  • 3 tablespoons butter

*Lemony Lemon is our favorite for a refreshing, summery cheesecake, & Double Chocolate Chip is our go-to for ice cream cakes

Directions:

1. Melt 3 tablespoons of butter.

2. Break up the cookies and place them in a blender or food processor*, along with the melted butter.

*No worries if you don’t have either, as this can also be mixed by hand—just make extra sure to smush out all the chunks.

3. Blend the cookies and butter until smooth.

4. Press mixture into the bottom of a 9-inch pan.

5. Refrigerate the crust while you prepare your filling-of-choice. 



Voilà!! The best part about this recipe is that you can switch it up every time. Along with trying different Fat Snax cookie flavors, you can also make mini pies using a muffin pan (tried and true, these babies are super bite-sized and cute). You can also use whipped cream as a filling for a dreamy and fluffy dessert. Or, you can decorate the top with nuts or berries for an elegant birthday cake (or if you want something impressive to bring to picnics and potlucks).
